Fruit juices usually have a sweet and sour taste, which in itself says a lot about the ingredients. Natural fruit juice mainly contains water, natural fruit sugars such as fructose, glucose and others (usually about 11-15%, depending on the type of fruit), some natural fruit acids (for instance apple or citric acid) and vitamins and minerals.

The principal natural component of fruit juice is water, which represents 80% of juice on average.

THE SECRET OF THE BEST JUICES

Fruit for the production of fruit juice must above all be healthy, suitably ripe, fresh or properly stored after harvesting. When processed into fruit juice, especially by pressing, it is also important that the fruit is of the right type and sufficiently juicy.

JUICY FRUIT

Fruit containing a large proportion of juice is said to be very juicy and the juice oozes from it even during cutting. Such fruit includes, for example, oranges and apples.

PULPY FRUIT

Certain types of fruit, such as apricot, peach or strawberries, do not give much or any juice when pressed, especially if the fruit is very ripe. This is why such fruit is mashed, crushed or milled, whole or peeled (without pits), to obtain a so-called fruit purée or mash. It differs from juice made from juicy fruits in that it contains more fruit fibres and pieces of fruit.

Pineapple is rich in vitamins A and C, which are strong antioxidants. Pineapple is filled with fibre and manganese, which is important for bone strength and contributes to digestion, in addition to which it alleviates pain and inflammation. As far as minerals are concerned, the highest content is that of calcium, phosphorus, magnesium, iron, sodium and potassium. Among the enzymes found in pineapple, the most beneficial is bromelain. Besides other things, it helps the stomach soften food and inhibits the growth of cancer cells.

Concentrated fruit juice or concentrate is made by removing water from fruit juice. This is achieved by heating the fruit juice at a low temperature under a vacuum and, as the water evaporates, the juice thickens. All of this takes place in a vacuum so that the smell and taste are preserved as effectively as possible. From an average of 10 litres of fruit juice, only 1.5 litres of such concentrate are obtained. The main reason for concentrating juice is to ensure the stability of the fruit juice and to provide for the safe and quality storage of processed fruit throughout the year.

Water quality is naturally a very important factor in the preparation of fruit juices and fruit nectars, which are made from concentrate, as it represents 80% of the composition on average. Therefore, it is extremely important what kind of water they contain. At Dana, all fruit juices from concentrate are prepared using Dana natural mineral water. Before the juice is placed on the store shelves, 100% fruit juice is added to the same amount of water that was extracted from it in the process of concentration, so there is no need to indicate water on the packaging as an ingredient.

During the production of fruit juice, concentrated fruit juice or concentrate is only added to the amount of water that was extracted from it in the process of thickening. Only flavourings, pulp or fruit cells that have been extracted during the process of the production of concentrated fruit juice may be added as well. For added nutritional value, a fruit juice can be supplemented with vitamins and minerals, as well as antioxidants to protect the colour, which is of course clearly labelled on the packaging.

100% fruit juices may not contain any added sugar. The “no added sugar” claim is therefore not permitted on the packaging. The nutritional label on the packaging indicates the amount of natural fruit sugar contained in the fruit from which the fruit juice was made. The properties of the juice from concentrate are prescribed in accordance with the EU Fruit Juice Directive. The dry matter content of apple juice from concentrate should be 11.2%, which means that these products are in a way “typified” and the sugar content does not differ between them.
